Scientists are recommending that people adopt a "root to tip" approach to eating vegetables and fruits to increase fiber intake and reduce the risk of heart disease and cancer.
The guidance encourages consumers to stop discarding edible parts of common foods that are typically thrown away, such as peels, stems, and leaves, which contain valuable nutrients and dietary fiber.
Researchers say these often-binned portions can contribute significantly to daily fiber goals, which are linked to lower rates of cardiovascular disease and certain cancers.
